Crust
1/2 Cup Butter
1 Cups Brown Sugar
2 Cups Flour
1/4 tsp Baking Soda
2 Whole Eggs
1/4 tsp Salt
Filling
1 Cup Sugar
2 1/4 Cups Dates, Pitted and Chopped
1 Cup Water
1 Cup Walnuts, finely chopped
Cheesecake
4 Sticks Cream cheese (room temp)
4 Whole Eggs
1 Cup Sugar
1 tsp Vanilla

Directions:
Directions:
For crust: Cream butter and brown sugar till fluffy, add eggs, one at a time. Beat well. Sift dry ingredients, add to butter mixture, mix thoroughly, chill. Preheat oven to 400. Take balls of dough and flatten them, place on cookie sheet. Bake for approximately 10 minutes. Cool completely.
Put cookies in food processor and process till fine. Add 1/2 cup of softened butter, process till incorporated. Press into bottom and sides of 8" spring form pan. Set aside.
For filling: In saucepan simmer sugar dates and water for 10 minutes, add nuts. Chill.
For cheesecake: preheat oven to 350. Cream cream cheese till smooth. Add sugar, add eggs, add vanilla. with spatula, fold in filling mix. Pour into prepared spring form pan. Bake for approximately 1 hour. The cake should still jiggle a little bit in the center when removed from oven. Cool to room temperature. Chill in refrigerator at least 4 hours.
