3 c. self-rising flour
2 c. sugar
1 c. vegetable oil
2 c. mashed bananas
1 tsp. cinnamon
3 eggs
1 tsp. vanilla extract

Directions:
Directions:
Sift flour and cinnamon together; set aside. Beat eggs and sugar together for 2 minutes. Add oil to egg and sugar mixture and beat for 2 minutes. Add vanilla extract. Mix in banana and flour mixture. Bake in 9' x 13' pan or 2 loaf pans or muffin pans. Grease and flour pans (for muffin pans, I just spray with cooking oil spray). Bake at 350 for 50 minutes for larger pans and about 30 minutes for muffin pans.

You can use this recipe for zucchini bread. Just use 2 cups grated zucchini in place of the bananas and bake for 1 hour for larger pans and about 30-35 minutes for muffins. You can also add 1 cup chopped nuts if desired.
