2 eggs, well beaten
½ cup sugar
½ cup melted butter or margarine
1½ cups flour
¼ tsp soda
1 tsp cinnamon
2 tbsp white vinegar
2 tbsp cold water

Filling:
2 cups, approx 1 lb, ricotta cheese
½ cup sugar
2 tsp vanilla
½ cup finely chopped citrus peel
½ cup mini semi sweet choco chips or almonds

Directions:
Directions:
Add ingredients in order listed; beat well after each addition. Shape hot cookie into cone or roll into cylinder

Filling:
Beat ricotta cheese and sugar thoroughly -- about 10 minutes. Add remaining ingredients. Chill. Stuff into cannoli shells
