about 1 cup powdered sugar
2 tablespoons plus 2 1/2 teaspoons unflavored gelatin- 3 1/2 envelopes or so
1/2 cup cold water
2 cups granulated sugar
1/2 cup light corn syrup
1/2 cup hot water
1/4 teaspoon salt
2 large egg whites
1 teaspoon vanilla

oil bottom and sides of 9 X 13 pan with vegetable oil. dust sides and bottom with some powdered sugar.

In mixer bowl, sprinkle gelatin over cold water and let soften.

In 3 quart heavy saucepan cook granulated sugar, corn syrup, hot water and salt over low heat until dissolved. Increase heat to moderate and boil mixture without stirring until candy thermometer registers 240º. This takes 12-20 minutes.

Remove pan from heat and pour sugar mixture over gelatin mixture, stirring until gelatin is dissolved. Stir very thoroughly or hard blobs of gelatin will form.

Beat mixture on high speed until thick, white and nearly tripled in volume. This takes 6-10 minutes.

In a clean bowl with clean beaters, beat egg whites to a stiff peak. Beat egg whites and vanilla into sugar mixture until just combined. Pour mixture into baking pan and sift powdered sugar over top. Chill uncover until firm, several hours or even overnight.

Run thin knife around edges and turn out onto pastry mat which has been dusted with powdered sugar. With pizza cutter, cut into 1 inch cubes. Toss marshmallows a handful at a time with powdered sugar to coat. Keep in airtight container.
