3 T Vegetable Oil
2 Medium Onions, peeled, halved and thinly sliced
3½ lbs Sweet Potatoes (about 6 large), peeled
1 c Golden Raisins
2 T Light Brown Sugar
1½ tsp Salt
1 tsp Ground Ginger
½ tsp Cinnamon
¼ tsp Cayenne Pepper

Directions:
Directions:
In a large skillet, heat oil over medium-high heat. Add onion and cook, stirring occasionally, for three (3) minutes or until golden. Add sweet potatoes and cook, stirring occasionally, for 10 minutes.

Add 2 cups water, raisins, light brown sugar, salt, ginger, cinnamon, and cayenne pepper. Cook, covered, over medium heat 12 minutes or until tender. Stir occasionally.

Serve warm or at room temperature.

Do Ahead: Spoon fully prepared potatoes into a casserole dish and let cool. Cover with plastic wrap and refrigerate for up to two (2) days. To serve, unwrap and allow to stand at room temperature for at least 30 minutes, then heat at 325ºF for about 30 minutes or until internal temperature registers 140º on an instant-read thermometer.
