1½ lbs beef stew cubes
¼ cup flour
1½ Tbsp oil
2-14 oz cans beef broth
1 large onion, sliced
1 Tbsp minced garlic
3 lbs sweet potatoes
1 lb carrots
1 lb parsnips or turnips
3 stalks celery
1 Tbsp butter
¼ tsp salt

Directions:
Directions:
Position oven racks in thirds, heat to 325º. Dredge beef in flour, heat oil in Dutch oven, add beef, brown. Then add beef broth, onion, garlic, and bring to boil then cover pot and put in oven. Wash and pierce potatoes, place them on another oven rack, cook 30 minutes. Cut carrots, parsnips or turnips and celery into 1" pieces, add to pot of stew. Bake another 45 minutes or until tender. Peel potatoes and mash with butter and salt. Spread mashed potatoes on top of stew, bake 50 minutes.
