Mexican Flautas aka Taquitos Recipe

Ingredients: Flour Tortillas or corn (Healthier) (heat in microwave wrapped in paper towel to soften.Microwave at least 2 minutes or until soft. Separate immediately after or will stick and brake.
1 Pack of chicken 1 Tomato 1/2 a Large Onion 1 Small green bellpepper 4 Garlic Cloves Salt & pepper, Adobo Seasoning or Chicken Bouillon to taste. Oil (Canola or Grapeseed Oil are the healthier alternatives.)

Directions:Boil chicken in water with small piece of onion and a clove of garlic. Add a tsp. of salt. Once well cooked no longer pink, remove chicken from broth. Keep broth. Shred chicken once mid cold. Next chop if you have a handy " Chef's Chopper" add tomato, onion, bell pepper and garlic. In a medium pan pour oil and saute veggies. Then, add chicken to veggies and cook in mid heat until everything is well cooked. Add mixture to the choice of tortilla at one end.(medium line of mixture across tortilla) and roll until it looks like a flauta or flute. When ready to fry increase flame to medium, no splattering that way. You can fry as you roll them or until all rolled up. Make sure seam of tortilla is facing down so it won't open. 6-8 at a time. As you take Flautas out with tongs put in a ready tall bowl container with paper towels to absorb oil.
You can serve with refried beans black or pinto and mexican rice.
Hint: Chicken broth can be used instead of water for mexican rice. Also, an avocado with onion and garlic and broth blended to make puree for dressing on flautas or dip.
Dress up flautas with avocado puree and sprinkle with mexican cheese. (Queso Fresco)

Notes: If it turns out that you have left over un eaten flautas, freeze them for next time. Great for appetizers, just cut them in half.
