1¼ lb Chicken Breasts
½ tsp Ground Cumin
1 c Shredded Monterrey Jack/Cheddar Mix
1 can Diced Green Chilis (4 oz)
8 inch Flour Tortillas
Water

Sour Cream for Topping
Salsa for Topping

Directions:
Directions:
Preheat oven to 400ºF. Boil chicken until done. Drain and let cool slightly. Shred chicken and place in medium size bowl. Sprinkle with cumin. Add the cheese and chilis; stir to combine.

Spoon about ½ c chicken mixture down center of each tortilla. Fold bottom of tortilla over filling, then fold sides, and top. Brush each chimi lightly with water to coat and place, seam side down, on baking sheet.

Bake 12-15 minutes, or until tortillas are crisp and just barely golden brown.

Top with sour cream, salsa, and other toppings of your choice.
