200g Brussels sprouts
60g whole grain mustard
60g apple cider vinegar
40g olive oil
10g granulated sugar
4g salt
3.5g caraway seeds

Directions:
Directions:
Wash Brussels sprouts thoroughly and remove any blemished outer leaves. Chop off the stems with a knife. Using a Mandoline, set to about 2mm, hold the sprout by the bottom and shred each sprout to its base. Transfer shredded Brussels sprouts to a large bowl. Pour mustard, vinegar, and olive oil directly over shredded Brussels sprouts and sprinkle on sugar, salt and caraway seeds. Toss thoroughly and serve or refrigerate until needed.
