1 cup sugar
1 stick of butter
4 eggs
1 Tbsp lemon juice
1 (20oz) can crushed pineapple
½ cup drained pineapple juice from can (don't worry if you are a little short)
6 slices of white bread de-crusted and cubed

Topping

2 Tbsp sugar
½ tsp cinnamon

Directions:
1. Cream sugar and butter together. Beat 4 eggs and add 1 Tbsp lemon juice. Fold in cubed bread, crushed pineapple, and drained juice.

2. Pour into greased casserole dish (8x8, quiche pan (I use this), pie plate). Sprinkle 2 Tbsp sugar and ½ tsp cinnamon over mixture.

3. Bake 375º for 40-50 minutes.
