Pie crust, prebaked
2 yellow onions
1 tablespoon balsamic vinegar
1 cup chopped baby Bella mushrooms
1 cup Muenster cheese (or preference)
½ tsp. Salt
½ tsp. Pepper
¼ tsp. Nutmeg
½ tsp. Thyme
4 eggs
½ cup heavy cream
½ cup milk

Pre-bake pie crust and set aside. Thinly slice onions. Cook in 1 tbs. olive oil in pan on low to medium-low heat, stirring occasionally for 20 minutes. Onions should appear translucent and very soft. Sprinkle with a little salt. Add balsamic vinegar and cook for 10 min more until caramelized. Remove onions from pan and set aside.

Add chopped mushrooms to warm pan, adding more oil if needed. Cook on medium-low until soft. About 6 minutes. Set aside.

Whisk milk, cream, salt, pepper, nutmeg, thyme, and eggs together until incorporated.

Layer cooked onions and mushrooms in pre-baked pie crust. Sprinkle with shredded cheese. Poor egg mixture on top of crust and vegetables. Bake at 350 degrees for 35-40 minutes until middle is set and top is golden brown.
