1 lb cooked chicken (shredded)
6 corn tortillas
2 cans chicken broth
1 can black beans (drained and rinsed)
1 c frozen corn
1 1/2 c Rotel (original)
1/2 tsp chili powder
Shredded cheese

Directions:
Directions:
Preheat oven to 425. Take 4 of the tortillas and slice them into strips. Place on a baking stone and toss with olive oil. Bake for 10-15 minutes. Add chicken broth. black beans, corn & tortilla pieces. Stir well in a separate bowl. Add Rotel and chili powder. Bring to a boil and then reduce heat to medium-low and let simmer for 15-20 minutes. Serve topped with crispy tortilla strips and cheese.
