1½ cups sugar
1¾ cups all-purpose flour
¾ cup unsweetened cocoa
2 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
2 eggs
1 cup black coffee (or 2 tsp. instant coffee plus 1 cup boiling water)
1 cup buttermilk (or sour milk: 1 Tbsp. white vinegar plus milk to equal 1 cup)
½ cup vegetable oil
1 tsp. vanilla

Frosting:
2 lbs. powdered sugar
1 cup unsweetened cocoa
1 cup butter, softened
⅔ cup boiling water
2 tsp. vanilla

Cake:
Heat oven to 350ºF. Grease and flour two 9-inch round baking pans or one 13x9x2-inch baking pan.

In large mixer bowl, blend sugar, flour, cocoa, baking soda, baking powder, and salt. Add eggs, coffee, buttermilk, oil, and vanilla. Beat on medium speed of mixer for two minutes (batter will be thin). Pour batter into prepared pan(s). Bake 30 to 35 minutes for round pans or 35 to 40 minutes for rectangular pan. Test cake with a toothpick and continue baking until it comes out clean when inserted in the center of cakes. Cool for 10 minutes. Remove cakes from pans and move to wire racks to continue cooling. Frost once completely cooled.

Frosting:
While cakes are cooling, combine all frosting ingredients and mix until desired consistency is reached. Frost cakes as desired.
