1¾ cup sifted, enriched flour
2 Tbsp. sugar
2½ tsp. baking powder
¾ tsp. salt
1 egg, well-beaten
¾ cup milk
⅓ cup vegetable oil

Directions:
Directions:
Heat oven to 400ºF.

Sift dry ingredients into mixing bowl and make a well in the center. In a separate bowl, combine egg, milk, and oil. Pour wet mixture into well all at once. Stir quickly only until dry ingredients are moistened. Fill greased muffins pans or paper muffin cups ⅔ full with mixture. Bake muffins for 25 minutes.
