3 cups flour
2 cups sugar
1 tsp. baking powder
1 tsp. salt
1 cup shortening
1 cup unbeaten eggs (4-5 eggs)
¾ cup sweet milk
Vanilla

Directions:
Directions:
Sift together flour, sugar, baking powder and salt. Add shortening and eggs, and beat for 3 minutes. Add milk and vanilla. Pour in tube pan, and bake in modern oven at 325º F for 1 ¼ hours.

This recipe is so interesting because Lois refers to the source as "Texas Lady". She had re-written this one from a very old card where she calls the source "Mrs. Smith, Texas". This was probably a restaurant patron who talked to Lois about her Texas version of a Pound Cake. Lois, who most likely had one of the best pound cakes around, was always interested in adding recipes to her collection. Even though she had no doubt perfected the Pound Cake, she was always looking for something that would make her cooking and restaurant even better!
