2 lbs. boneless, skinless chicken thighs
½ tsp. salt
1 tsp. paprika
1 tsp. ground ginger
1 tsp. ground cumin
1 tsp. ground coriander
1 tsp. turmeric
½ tsp. ground cinnamon
½ tsp. ground allspice
¼ tsp. crushed fennel seeds
⅛ tsp. ground nutmeg
1 red onion, roughly chopped (about 2 cups)
3 cloves garlic, minced (about 1 Tbsp.)
1 cup pitted green olives (can be left whole or chopped)
½ cup golden raisins
½ lemon, thinly sliced
fresh cilantro or parsley for garnish

Sprinkle salt over chicken thighs and let sit while you prep the other ingredients. Whisk together all spices in small bowl. In your slow cooker, place chopped onions at the bottom. Layer the chicken thighs on top of the onions and sprinkle all of the spice mixture over the chicken. Add the garlic, green olives, raisins, and lemon slices on top of the spice-coated chicken thighs. Set your slow cooker to cook on high for 2 to 2 ½ hours or 4 to 5 hours on low. Towards the end of cooking, stir the mixture so that the lemons, olives, and raisins get mixed into the liquid. The chicken is done when it is fall-apart tender. Garnish with fresh cilantro and/or parsley. [Tip: Serve with couscous or rice.]
