Irish Guinness Stew Recipe

2 pounds Lamb, cut into cubes
1 TB butter
1 TB olive oil
1 pound carrots, sliced
2 medium onions, diced
3 garlic cloves, minced
1+1/2 cup chicken broth
1 can (12 oz) Guinness stout
6 medium potatoes, cut into cubes
4 bay leaves
2 fresh thyme sprigs
2 fresh Rosemary sprigs
2 tsp salt
1+1/2 tsp pepper

Preheat oven to 325º

Heat large oven proof Dutch oven then add butter & once melted, add meat in batches until it develpoes a lovely, rich brown color , Take out of pot & set aside (but keep warm)

Put all veggies into pot with all those lovely lamb bits & saute until tender. Add garlic & cook another minute (do not burn!!) or so then slowly add stock & stout.

Add meat & herbs into pot & stir well.
**A pinch of sugar can be added to help balance the bold flavors of Guinness

Cover pot with lid & put into oven - bake for 1+1/2 to 2+1/2 hours. Stir every 30 minuts or so!
DO NOT RUSH THIS, just simmer until liquid thickens
