1 can black beans, rinsed, drained
1 can black eyed peas, rinsed, drained
1 can shoepeg corn, drained
1 jar pimentos, drained
1 can diced jalapenos (DO NOT DRAIN)
1 cup finely chopped celery
1 cup finely diced green onion (scallions)
3 tbsp chopped cilantro

In jar with lid, mix together:
½ cup white sugar
½ cup white vinegar
½ cup oil

Shake the jar with sauce well to dissolve sugar, then pour over the bean mixture. Chill well, at least one day and werve with your favorite chips. Before serving, mix thoroughly. If too runny, just drain a little juice off.
