1 lb ground sweet Italian sausage
2 cups broccoli florets, broken to smaller pieces
2 cups fresh cauliflower florets, broken to smaller pieces
1 cup chopped carrots
1 cup chopped onion
1 can (14.5 oz) stewed tomatoes
1/2 tsp Italian seasoning (or to taste)

Directions:

In a large pan on medium heat, saute sausage and onions until done. Add about
half of the juice from the tomatoes and all of the carrots. Continue cooking carrots
until they soften, then reduce heat to low.

Add tomatoes and rest of juice, broccoli and cauliflower and simmer, covered until
broccoli and cauliflower soften.

Serve as a main dish or a side dish.
