9 2-inch Lasagna Noodles
1 lb Lean Ground Beef
2 cans Diced Tomatoes with Basil, Garlic, and Oregano (14½ oz each), or one (1) 28 oz jar of Spaghetti Sauce
2 cans Whole Leaf Spinach (13½ oz each)
1 15oz Lite or Part-skim Ricotta Cheese
3 c Mozzarella Cheese, shredded (sometimes I use a mixture of white & yellow cheeses)

Directions:
Directions:
Preheat oven to 350ºF.

Cook past according to package directions and drain.

Cook meat. Add tomatoes, or spaghetti sauce and heat thoroughly.

Drain spinach well squeezing out excess liquid; blend with ricotta cheese.

Layer three (3) noodles, ½ spinach mixture, ⅓ tomato mixture, and ⅓ cheese in 9x12 inch baking dish. Repeat, ending with noodles, tomatoes, and cheese.

Bake at 350ºF for 30-40 minutes, or until heated through.
