Ingredients:  
Ingredients:  
2 tbsp olive oil
1 small onion
3 garlic
15 oz. tin artichokes ( I use the bottled and drain off the liquid)
1 15 oz. tin tomatoes
1 cup vegetable broth
1/2 cup chopped roasted red pepper
1 tsp basil
1 tsp herbes de provence
salt/ pepper
3/4 cup milk
1/2 cup Parmesan cheese

Directions:
Directions:
cook onions and garlic in oil for about 5 minutes
add artichokes, tomatoes,vegetable broth, pepper and seasonings

cook for 20 minutes
puree
add milk

stir in cheese before serving

I doubled the recipe but I did not double the cheese
