2 cups milk
⅓ cup butter
3 T. all-purpose flour
tsp. ground mustard
1 onion, chopped
tsp. salt
tsp. ground pepper
1 (10-oz.) block extra sharp Cheddar cheese, shredded
tsp. ground red pepper (optional)
(16-oz.) pkg. elbow macaroni, cooked

cups dry bread crumbs
cup butter

Preheat oven to 400. milk at HIGH for 1 minutes. Melt butter and fry onion in a large skillet or Dutch oven over medium-low heat; whisk in flour and seasonings until smooth. Cook, whisking constantly, 1 minute. Gradually whisk in milk and cook, whisking constantly, 5 minutes or until thickened. Whisk in salt, black pepper and shredded cheese and if desired red pepper until smooth; stir in pasta. Spoon pasta mixture into a lightly greased 2-quart baking dish. In a microwave, melt remaining butter, toss with bread crumbs. Sprinkle over casserole. Bake at 350 for 30-35 minutes or until golden and bubbly.
