20 Lemons, large (scrubbed)
2 750ml Bottles of Everclear
5⅓ c Sugar
6⅓ c Bottled Water

Directions:
Zest lemons.

In glass jar, combine one (1) 750ml bottle of Everclear and zest.

Cover and let sit at room temperature for at least 10 days and up to 40, in a cool dark place.

In large saucepan, combine sugar and water. Cook until thickened, approximately 5-7 minutes. Let cool.

Add sugar mixture and additional bottle of Everclear to Limoncello. Allow to rest another 10-40 days.

Strain and discard zest. Bottle Limoncello, chill, and enjoy!
