3 c. white vinegar
2 c. sugar
1 c. water
12 c. small or medium beets
Cinnamon sticks and/or whole cloves, optional

Directions:
Directions:
Cook whole, unpeeled beets in water until tender. Drain, remove skins, slice into rounds. Place in six sterilized pint jars, adding spices if desired. Cook vinegar, sugar, and water in a saucepan until boiling and sugar dissolves. Pour vinegar mixture over beets, process in boiling water bath.
