1 ¾ Cups Flour
1 ½ Cups Sugar
2 Eggs
½ Cup Oil
3 Ripe Bananas
1 tsp Vanilla
1 tsp Baking Soda
½ tsp Salt
½ Cup Buttermilk (or soured milk)
¼ Cup chopped Nuts (optional)

Directions:

Combine eggs, banana, oil, buttermilk, and vanilla. Add dry ingredients. Stir until well combined. Pour into greased loaf pan. Bake at 325º for 80 minutes (1 hour 20 minutes). This recipe makes 1 loaf. Browned bananas can be frozen to preserve them until you have 3.
