4 Medium baked potatoes cooked and cooled
3-4 tbsp grated parmesan cheese
2 tbsp soft butter
2 tbsp chopped onion
1/4 cup milk
8-10 slices bacon
salt and pepper
Chopped chives or parsley

Directions:
Directions:
Half baked potatoes; Scoop out inside leaving shells intact.
In a small bowl, mash the potatoes. Blend in cheese, butter, onion and milk.
Cook bacon until crisp and crumble. Add bacon to potato mixture; Season with salt and pepper.
Stuff shells and sprinkle with chives or parsley.
Bake in oven 375F for 15-20 minutes

Potatoes can be prepared and frozen to reheat at 400F for 30-35 minutes.
