Dough:
3 sticks butter
2 sticks margarine
2 Tbsp crisco
3 cups warm water
3 Tbsp yeast
1 Tbsp sugar
~5 lbs of flour

Filling:
1 lb ricotta cheese
2 cups parmesan cheese
5 eggs, beaten
1 Tbsp melted butter
½ tsp dry yeast mixed with ¼ cup warm milk

Directions:
Directions:
1. Preheat oven to 350º

Dough:
1. Melt butter, margarine, and crisco
2. Mix yeast and sugar in warm water until foam ~20-25 minutes
3. In large bowl or mixer:
Add butters and water
Slowly add flour
Mix until dough forms
4. Cover with wax paper then kitchen towel, let it rise until double in size

Filling:
1. Mix all together

Assembly:
1. Roll out dough about size of a dessert plate
2. Add 1 Tbsp filling
3. Make into ½ moon, press edges and brush with egg

Bake until golden brown

Can let it rise in the oven while the oven is OFF.
