Tamale Round About Recipe

2 1/2 c ground beef (1.25 lbs)
1/2 t chili powder
1/2 t cumin
1/4 t salt
1 16 oz jar salsa
1/4 c green or red bell pepper, chopped
1 1/2 c flour
1 c yellow corn meal
1 can corn, drained
1/4-1/3 c sugar
1 T baking powder
1/2 t salt
1 1/4 c milk
2 eggs
1/4 c oil
4 oz shredded cheddar cheese
sour cream, optional

Spray pie dish with nonstick spray. For filling, brown beef, add seasonings and salsa once beef is browned. Cook over medium low heat for 5 minutes. Sprinkle bell pepper in bottom of pie pan. For cornbread, combine flour, cornmeal, sugar, baking powder and salt. Add milk, eggs, corn and oil, stir until dry ingredients are just moistened. Stir in cheese. Spread 1 1/2 c batter evenly over pepper. Top with filling then remaining batter, spreading evenly.
Bake 375 for 35-40 minutes or until top is lightly browned. Loosen corn bread from edge of pan with knife and serve as wedges with sour cream.
