2 c. flour
1/2 tsp. baking powder
3/4 c. butter or margarine
3/4 c. white sugar
1 egg yolk
1 tsp. vanilla
1/2 tsp. peppermint extract
Red food coloring

Directions:
Directions:
Mix together flour and baking powder. In another bowl, beat butter and sugar. Add egg yolk and vanilla to the creamed mixture. Stir in dry ingredients and mix well. Divide dough in half. Add peppermint extract and a few drops red food coloring to one half of dough; mix well, until dough is uniform color. Roll each half of dough between 2 sheets of wax paper, to make 2 16x10-inch rectangles. Remove wax paper and put one dough rectangle on top of the other, matching edges as closely as possible. Roll up dough tightly. Wrap in wax paper and chill. When ready to bake, preheat oven to 350º F. Unwrap dough and slice into 1/4-inch cookies. Place on ungreased cookie sheet, and bake just until firm (do not brown), about 10 minutes. Cool slightly; remove from cookie sheet and cool completely on a wire rack.

Mom used to make these when she baked at Christmas. It was one of my favorite holiday cookies. Now my kids ask for them at Christmas. They are very pretty, and very tasty. The number it makes depends on how large you roll out the dough, and how many you end up slicing.
