¼ cup vegetable oil
½ cup sugar
1 egg
1 tsp almond extract
1 cup mincemeat
1 ¾ cup flour
1 tsp baking powder
½ tsp salt
½ cup each red & green candied cherries

Directions:
Directions:
In large bowl, beat oil and sugar. Beat in egg & almond extract. Stir in mincemeat. In a small bowl, combine flour, baking powder & salt. Stir into egg mixture until blended. Stir in cherries. Drop by rounded teaspoonfuls onto a greased or parchment paper lined baking sheet. Bake in 350º oven for 14 minutes.
