2 Eggplant
2 Zucchini
2-3 Potatoes, peeled
1 lb ground meat
1 onion, chopped
1 garlic, minced
2 bay leaf
1 can tomato sauce

4 cups of milk
¾ cups cornstarch
¼ stick butter
3 eggs, beaten
½ cup parmesan cheese

1. Preheat oven to 350 º

2. Prepare
Slice vegetables ( eggplant, zucchini, and potatoes)
Coat with EVOO
Broil till soft

3. Meat sauce
Brown meat, onion, garlic, bay leaf
Add tomato sauce
Cook until soft

4. Bechamel sauce:
Mix 1 cup of milk with corn starch + egg
Warm rest of 3 cups of milk in large sauce pan
Add nutmeg and ¼ stick of butter
Stir constantly with a whisk
Once thickened, add 2 beaten eggs and ½ cup parmesan cheese

5. Assemble
Pour 3-4 tbsp sauce on bottom of 9x13 pan
Layer potatoes
Layer meat sauce
Layer eggplant
Layer meat sauce and cheese
Layer zucchini
Layer meat sauce and cheese
Top with Béchamel sauce
Sprinkle with cheese and nutmeg

6. Bake uncovered until brown
