Eggplant
Zucchini 4-5
1 onion, chopped
1 can tomato sauce
1 lb meat of choice
parsley
1 tbsp EVOO

Béchamel
4 cups of milk
½ stick of butter
¾ cups cornstarch
⅓ cup grated cheese
2 eggs beaten

1. Prepare
Cut eggplant and zucchini lengthwise
Soak eggplant in salt water for 15 min ( 1 tbsp salt )
Scoop out the insides and chop

2. Sautee onion, meat, chopped veggies in EVOO
Add sauce, bay leaf
Cook until thick


3. Béchamel
Heat 3 cups of milk in pan with butter
Add nutmeg
In a bowl beat 2 eggs, add cornstarch and 1 cup of milk. Mix well
Add mixture to the warm milk and mix very good until thickens
Add parmesan cheese

4. Assemble
Stuff eggplant/zucchini with meat sauce
Top with béchamel
Sprinkle with cheese and nutmeg

5. Bake until browned

500 grams of 5% greek yogurt
1 egg, beaten
1 tsp EVOO
nutmeg
1/4 cup of grated cheese
