Eleanore Harper's Pickled Zucchini Recipe

2 lbs zucchini
2 small onions
1/4 cup salt
2 cups white vinegar
2 cups sugar
1 tsp celery seed
1 tsp turmeric
2 tsp mustard seed

After washing & peeling zucchini, cut into thin slices.

Peel & quarter onions & cut into thin slices

Put into a bowl together & Cover with water & salt. Let stand 2 hours.

Drain thoroughly.

Bring the rest of the ingredients to a boil & pour over the vegetables. Let stand 2 hours, then bring to a boil & boil for 5 minutes. Pack into hot sterilized jars & seal.
