Ingredients:  
1 lb meat
1 onion, chopped
28 oz tomato sauce
1 tbsp mint
3 tbsp parsley
½ cup rice, uncooked

1 potato, peeled and sliced
3 tomatoes
2 peppers
1-3 small zucchini

Directions:
Directions:
Preheat oven to 375º

1. Prepare vegetables
Scoop out center of tomatoes, pepper, and zucchini
Chop centers of tomatoes and zucchini
Place in a bowl

2. In bowl add:
Rice, meat, onion, parsley, mint, salt and paper
Small amount of EVOO
Enough tomato sauce to moisten

3. Assemble
Add salt to middle of tomatoes and peppers
Stuff vegetables
Put lid side down in pan
Poke holes in zucchini

4. Stick potatoes in between vegetables

5. Sauce:
In another bowel, mix ½ of remaining tomato sauce, ¼ cup EVOO, garlic powder
and pepper
Pour over vegetables

6. Cook:
Cover with aluminum foil
Bake at 375º for 45 min
Uncover and cook another 20-30 min
