Enola's Baked Beans Recipe

2 pounds dried navy beans
1 cup brown sugar, packed firm
1 lb lean salt pork or half cup bacon fat
5 medium onions

Directions:
Directions:
Cover beans with water & soak overnight.
In the morning, sort them & throw away any bad ones or stones.
Drain off all the water & cover with fresh water.

Boil beans until the skins begin to crack.

Remove from heat, add brown sugar, salt pork (or bacon fat), & lay onions on top. Leave the onions whole.

Cover top with water & bake in 450º oven for 2 to 3 hours.

Check occassionally & add more water of the top starts to dry.

If you want them well done (really soft) reduce temperature to 400º & bake longer. Add salt to taste
