2 ¾ lbs of potatoes
¾ cup grated cheese
4 eggs, separated
1 tbsp fresh parsley, finely chopped
Bread crumbs toasted
EVOO for frying
Salt and pepper

Prepare:
1. Boil potatoes with skins
2. When cool, peel and grate in a bowl
3. Add egg yolks, cheese, parsley, and S&P
4. Mix until well blended, set aside

Assemble and cook
1. Add ¼ cup oil in frying pan and heat over medium-high heat
2. In a shallow bowl, add toasted bread crumbs
3. In another shallow bowl, beat egg whites with a little water
4. Make small flat patties with the potato mixture
5. Dip potatoes in bread crumbs, then egg whites, then bread crumbs again
6. Fry until browned on both sides
7. Drain on paper towels
