Clara Troy's Beef & Potato Casserole Recipe

1 lb ground beef
2 TB salad oil
1 tsp sage
4 cups potatoes, sliced thin
1 cup boiling water
1/2 tsp salt
1/8 tsp pepper
1 can French fried Onions
Homemade or jar spaghetti sauce (1 3/4 cup water + 1 can tomato sauce - cook for 10 minutes)

Preheat oven to 350.

Brown meat slowly in hot oil

Cook sliced potaoes in 1 cup boiling water in a covered pan for 5 minutes, then drain

Toss with salt & pepper & half of the onions.

Prepare the spaghetti sauce

Alternate layers of potato mixture, ground beef & sauceinto a 2 qt baking dis ending with sauce'

cover dish & bake for 45 minutes

Sprinkle the remaining onions on top & continue baking, uncovered for 5 minutes more.
