5 lbs of fresh tomatoes or 3 - 28 oz cans of crushed or diced tomatoes or a combination of both
2 Tb olive oil
1 large yellow onion, diced
1 red pepper, diced
1 jalapeno, diced (optional)
3 cloves pf garlic, minced
1 tsp salt
1/2 tsp pepper
1 TB Worcestershire sauce
6 oz tomato paste
2 TB chopped fresh basil
2 bay leaves
2 TB Italian Seasoning
1 TB sugar
1 to 2 lbs of lean ground beef, turkey or Italian Sausage

If using fresh tomatoes:

Bring a large pot of water to a boil
Fill a large bowl with ice water
Drop 4-5 tomatoes at a time into the boiling water for 45 seconds, then drop into the ice bath.
Peel skin off to,atoes & squeeze out excess liquid & seeds.

Heat olive oil in medium sauce pan
Add onions & peppers& saute for 4 to 5 minutes until onions are translucent. Stir in garlic, salt & pepper & cook for an additional few minutes

Combine tomatoes, onion mixture, the remaining ingredients (except meat) in a large slow cooker & stir to combine

If you are making a meat sauce, add now

Place a paper towel between the lid & the insert & cook on low for 6 to 8 hours or high for 3 to 4 hours
