6 medium pork chops
¼ Tbsp. oil
1 bell pepper, cut in squares
1 c. celery, sliced
1 small onion, diced
2 Tbsp. corn starch
3 Tbsp. brown sugar, packed
1 tsp. salt
½ c. orange juice
½ c. vinegar
1 15 oz can sloppy joe sauce
1 8 oz. sliced pineapple, undrained and quartered

Directions:
Directions:
Trim fat from chops. Brown fat trimmings in oil, remove and set aside. Add to skillet bell pepper, celery, and onion. Saute lightly, drain fat. Mix cornstarch and brown sugar. Add to skillet with remaining ingredients. Cook, stirring constantly, until thickened. Return pork chops, cover and simmer 30 min. over low heat. Stir once or twice.
