2 C of unsifted flour
2 tsp baking soda
2 tsp cinnamon
½ tsp ginger
½ tsp salt
3 eggs
1½ C sugar
½ C mayonnaise
¼ C orange juice
8oz can crushed pineapple (not drained)
2 C shredded carrots
¾ C crushed walnuts



FROSTING
3oz cream cheese
2 Tbls butter softened
½ tsp vanilla
1½ C confectioners sugar

Grease and flour two 9” round pans
Pre-heat oven to 350°
Mix the first 5 ingredients in a bowl and set aside.
In a large mixing bowl, beat the next 5 ingredients at medium speed until blended well. GRADUALLY add the dry ingredients until it is all mixed. Then fold in carrots and nuts.
Pour into two pans and bake for 30-35 minutes or until toothpick comes out clean .


Frosting:
Beat cream cheese, vanilla and butter till smooth then gradually add sugar.
