1 lb ground beef
1/2 lg onion
1 clove garlic
1 pkg taco seasoning and water per pkg
1/2 C salsa
12 oz bag frozen riced cauliflower
1/2 c water
15 oz can black beans, rinsed and drained
10 oz bag frozen roasted corn
Toppings: shredded Mexican cheese, sour cream, guacamole or avocados, lettuce, tomatoes
Salsa and tortilla chips

Directions:
Directions:
In large skillet brown green beef and onion. Add garlic and cook additional minute. Drain.
Add taco seasoning and water per package. Cook until liquid has reduced. Stir in the salsa, cauliflower rice and water. Simmer over medium heat until cooked through. Stir in black beans and corn and heat through.
Spoon into bowls along with toppings.
