1 c. sugar
2 heaping T. of cornstarch
1 c. water
2 heaping T. of strawberry jello mix
1/4 tsp. red food coloring
1 large pint of strawberries, washed, stemmed and sliced
1 9-in. baked pie crust

Directions:
Directions:
Stir and cook sugar, cornstarch and water over medium heat until thick and clear. Add jello and food coloring. Set aside to cool. Stir sliced strawberries into cooled jello mixture. Spoon strawberry filling into baked and cooled pie crust. Refrigerate until firm, at least 3 hours. Serve with whipped cream.

Allison requested this one for the cookbook. I got the recipe from Mom's recipe box, but it actually came from Bert Sparks, a friend and co-worker of Mom's. It's very refreshing and just tastes like summer.
