4 c. gooseberries (about 2 pints), washed and scraped free of stems
2 c. sugar
1/4 c. cornstarch
1/2 tsp. ground cinnamon
1/4 tsp. salt
9-in. double pie crust
1 T. butter

Directions:
Directions:
Preheat oven to 450º F. Press one pie crust into a pie plate. In a medium bowl, combine sugar, cornstarch, cinnamon and salt. Add gooseberries and toss well; mash gooseberries with a slotted spoon or potato masher so that all sugar is moistened. Spoon gooseberry filling evenly into crust; dot with butter. Cover with top crust and seal edges. Vent pie and brush with milk. Sprinkle sugar on top. Bake for 10 minutes; reduce heat to 350 degrees and bake 1 hour more, or until crust is golden. Cool completely before serving. Serve with vanilla ice cream.

Gooseberry pie is an acquired taste. I love it, but it's not for everyone. For example, I learned that Dad does not like gooseberry pie. He planted a gooseberry bush for Mom, because SHE liked gooseberry pie. She would make it in the summer, and sometimes later, if she had enough berries to freeze. I remember she would sometimes make one in February for Ash Aeschliman's birthday, because he really liked gooseberry pie. Luckily, Dad has shared his gooseberry crop with me several summers, so I have been able to make gooseberry pie for my family. My husband hates it, but my kids love it, too!
