Ingredients: 1 15oz. can great northern beans 1 meaty ham bone or 2 smoked ham hocks 1 large onion, chopped 2 garlic cloves, minced 2 celery ribs, chopped 1/4 cup minced fresh parsley 1/2 cup mashed potatoes 1/2 teaspoon pimento Salt and pepper to taste Minced parsley or chives

Directions:In a large soup kettle, place ham bone or hocks into 2 quarts water. Bring to a boil. Reduce heat, cover and simmer for 1 hour. Skim fat if necessary. Add the beans, onions, garlic, celery, parsley, potatoes, pimento, salt and pepper and simmer 1 hour longer. Fish out the ham bones and let cool enough to handle. Remove meat from the bones. Discard the bones. Dice the meat and return it to the soup kettle. Heat through. Sprinkle with parsley or chives. |

Notes: I made this one chilly day, inspired by an episode of The Andy Griffith Show, the one where Briscoe Darling ate four bowls of white beans. Season #3 if you're wondering. I started out making white beans with ham but it turned into Senate Bean Soup instead. As a young boy I had the real Senate Bean Soup in the actual Senate Dining Room. I had just pinned Senator William Proxmire from my home state of Wisconsin with the Scout Emblem for Boy Scout Week. I was chosen for this honor because I was the Cub Scout of the Year. Truth be told, the original scout chosen had come down with the measles. Don't tell Gigi.
