250 g peas
25 g butter
chicken stock 100ml
small bunch mint
12 scallops
1/2 tsp cumin
sunflower oil and butter
winter greens
balsamic vinegar













Directions:
Directions:
Simmer peas butter and chicken stock for 3-4 minutes
season
Puree with the mint
keep warm

in a non stick pan add oil and butter
when very hot, sear scallops, one minute each side

3 scallops per person place on bed of peas
mixed greens with balsamic vinegar on the side
