1+1/2 lb lean pork shoulder or tenderloin, cut into 2 x 1/2" strips
1 - #2 can pineapple chunks
¼ - ½ cup brown sugar
2 TB cornstarch
2 cans chow mein noodles
1/8 cup (or more to taste) vinegar
1 TB soy sauce
1/2 tsp salt
3/4 cup green pepper, rough sliced or diced
1/4 cup thinly sliced onion
3 cups cooked rice

Directions:

Brown pork slowly in 2 TB of hot fat, then add 1/2- 1 cup water, cover & simmer until tender - about an hour.
Drain pineapple, reserving juice.
in small saucepan, Combine brown sugar & cornstarch; add pineapple juice, vinegar, soy sauce & salt & cook over low heat until thick, stirring constantly.
Pour over hot cooked porl, let stand 10 minutes or so. Add pineapple, green pepper, onion & cook 2 to 3 minutes.
Serve over rice or chow mein noodles
