No Crust Pumpkin Pie


Ingredients:

3 eggs
¾ cup sugar
1 cup milk
¼ cup flour
1 (15 oz.) can pumpkin
½ tsp. salt
3 tsp. vanilla extract
1 tsp. cinnamon
1 tsp. pumpkin pie spices
½ tsp. nutmeg (if desired)

Directions:
Directions:
1. Preheat oven to 350º.
2. Whisk flour and spices. Set aside.
3. Beat eggs and sugar. Add milk and vanilla and beat.
4. Add pumpkin and mix well.
5. Add dry ingredients and blend together.
6. Pour into 9" pie plate.
7. Bake for one hour. Let cool on baking rack.
 

Skinny Pumpkin Pie

1 refrigerated Pillsbury pie crust
1 (15 oz.) can pumpkin
2 tbsp. butter, softened
¾ cup light brown sugar, unpacked
½ cup milk, fat free or 2%
1 large egg
2 large egg whites
½ tsp. pumpkin pie spice
½ tsp. cinnamon
¼ tsp. nutmeg
1 tsp. vanilla extract

1. Preheat oven to 350º. Line a 9 inch pie plate with unbaked pie crust.
2. Place pumpkin puree in large bowl. Add butter and mix well.
3. Using an electric mixer, add in remaining ingredients. Beat until smooth.
4. Pour filling into unbaked pie crust. Bake 70-75 minutes.
5. Cool. Cut into slices. Serve with whipped topping if desired.

1 tsp. pumpkin pie spice

1 (15 oz.) can pumpkin
1 (12oz.) can Evaporated milk

Directions:
Directions:
1. Preheat oven to 425º. Line a 9 inch pie plate with unbaked pie crust.
2. Combine sugar, salt and spices. Beat eggs in large bowl.
3. Stir in pumpkin and sugar-spice mixture.
4. Gradually stir in evaporated milk. Pour into pie shell.
5. Bake for 15 minutes. Reduce temperature to 350º.
6. Bake for 40 minutes or until knife inserted near center comes out clean.
7. Cool on wire rack for 2 hours. Refrigerate if not serving immediately.
