1 corned beef ~4Lbs with seasoning pack
dark brown sugar for glazing
1 cabbage, cut into 8 wedges
1 Lb baby carrots
4 large potatoes, peeled and cut in half.

Directions:
1. Rinse corned beef saving seasoning packet.
2. Bring a large pot of water to a rolling boil. With a large fork, dip the beef for about 1 minute and then remove. Allow water to return to a rolling boil and dip beef again. This procedure seals the beef so that it will not foam while cooking. When water return to a boil, return beef and reduce to a simmer, then add the seasoning packet. Simmer for about 2-21/2 hours. Beef will slip off of the fork when it is done.
3. Place the beef on a shallow baking pan i.e. a cookie sheets with sides. Coat the top of the beef evenly with brown sugar and pat down. Place in a preheated oven at about 250 degrees F, while vegetables cook.
4. Place the vegetables into the boiling water and simmer until done. About 1/2 hour. Carrots will take the longest to cook and potatoes the shortest.
