5 to 6 c. self-rising flour
2 c. sugar
2 eggs, beaten
1/2 c. shortening (crisco or lard)
1/2 c. butter or margarine
1 T. vanilla
1 c. buttermilk

Directions:
Sift 4 cups flour into a large bowl. Make a "well" in center. Pour in sugar, eggs, shortening, & vanilla. Add buttermilk gradually, working all ingredients into flour. Add more flour until stiff dough is formed. Chill about 30 minutes. Place a small lump into the center of an 8" or 9' cake pan. (lined with waxed paper and greased). Pat the dough out of cover the bottom. This will be very thin. Bake at 350 degrees about 21 minutes (or until brown). Remove from pan & cool. Repeat until all dough is used. Makes 9 or 10 layers.

Dried Apple Filling:
3 or 4 cups dried apples
1 c. granulated sugar
1 c. brown sugar
1/2 tsp. nutmeg
1/2 tsp. cloves
1/2 tsp. cinnamon

Wash apples. Cover with water and cook until tender, adding water as necessary. Mash and add sugars and spices. (to stretch apples, use about 1/4 cooked fresh apples) Spread between layers. Leave off top and sides. Let cake set 10 to 12 hours before cutting.
