2 cups ketchup
⅛ cup of lime juice
1 tbsp lemon juice
1 small bunch parsley or cilantro chopped
4 Roma tomatoes chopped
1 small onion chopped
1 avocado chopped and dipped in lemon juice to retain the color
2 lbs. of cooked, peeled, and deveined Shrimp
1 tsp salt and pepper

Directions:

In a large bowl with a lid, mix ketchup, lime juice, lemon juice, cilantro,tomatoes, onions, salt, pepper and shrimp. Let sit covered in the refrigerator for at least 2 hours. Serve in small cocktail glasses and garnish with the avocado on top and a whole parsley leaf.
